Black and Blue Berry Smoothie

On my meal plan I have to eat 5 smaller meals a day so some times eating gets old. Plus in the summer I don't want to eat that much. So smoothies are a life saver! This way I can make sure I get enough calories with out feeling like I eat all the time. This smoothie is packed with fiber and has a decent amount of protein as well. It's wonderfully refreshing and oh so yummy!

Recipe:
6oz greek yogurt
1cup blue berries
1cup blackberries
1/2 cup skim milk
1 tablespoon fat free redi whip

Blend away and enjoy!

(Tip: I recommend using frozen berries that way you don't have to worry about ice)

Peach-blueberry oatmeal muffinmania



I love to have a quick breakfast that I can grab on the go and muffins are perfect for that. Most muffins are filled with oil and packed with sugar, but not these! These are filling, fruity, and have a good amount of protein. Because it's summer I was able to use fresh peaches and blueberries and it was fabulous! I bet frozen would be great too. Highly recommended for people who have a hard time getting breakfast in.

PER SERVING (1 muffin):
110 calories, 1.5g fat, 125mg sodium, 22g carbs, 1.5g fiber, 8g sugars, 3g protein

Fruit Tart



I loved this recipe. It was the first faux cheesecake that I tried. The crust is exceptional! The recipe called for just blue berries on top, but I made this for a party and I wanted to please everyone. I also chose to drizzle to top with local honey instead of the maple syrup, but I'm sure it's wonderful the other way as well. This one is a crowd pleaser for sure :)

Rainbow Spaghetti Sauce

This is a little thing I whipped up. I am still training my self to like veggies that I would normally never eat. So this would be good for picky eaters and kids. It's a good way to sneak the veggies into something that everyone loves....spaghetti!

Recipe:
Tomato Sauce (Either from a jar or home made whatever you have time for)
Red, Yellow, and Green Peppers
Shredded Zucchini
Lean Turkey Burger 
Spice the Sauce to your liking (I like to add some heat to mine)
Let it simmer on a low heat until all of the veggies are to your desired done'ness

Coconut Macaroons



I love this recipe so much. I have made it for several get-togethers and they go fast! Be careful not to over whip the egg whites though, if you do they turn out kind of weird. I drizzle 72% dark chocolate over the top, it adds rich chocolaty flavor, but it's better for you ;)

Strawberry Banana Smoothie


This recipe is amazing!!! It is so yummy and it is perfect if you are craving a milk shake. It is made with greek yogurt, so it is really creamy and it has a good amount of protein in it as well. Some times I use this as an evening snack when the sweet tooth attacks.

Recipe
6oz greek yogurt
1/2 of a banana
1 cup strawberries
splash of milk
Sugar free whipped topping (I used the fat free Reddi-whip it's only 5 calories for 2 tablespoons!)

Blend it up and enjoy!

Tips:
  • If you use frozen fruits then you don't have to use any ice and it comes out really thick too.
  • Plus banana's are higher in calories and can sometimes overwhelm any other flavors, this way you can put as little or as much banana as you like. 
  • A good way to freeze the banana is to cut it into little slices and put them on a plate or cookie sheet, freeze them, and then put them in a bag that way they don't all stick together.

Hawaiian B-Fast Stacks



These are so good, fruity, and filling! There is just something awesome about the combination of cream cheese, Canadian bacon, pineapple, and salsa! I used mango salsa to add extra fruitiness! Plus they are super quick and easy to make. The serving size is two stacks for 249 calories so good :)

Cheesy Pigs in Bacon Blankies



This is another recipe that Zach picked :) I would imagine that this would be great for kids too! These remind me of being a kid, a fun and yummy spin on a classic! These are fantastic and certainly don't taste like anything you would EVER get to eat on a diet. Highly recommended if you are jones'n for some comfort food, and they are quick and easy to make too! these are 164 calories per dog which means I get to eat 2 yay!!!

S'mores Oatmeal



I am a big fan of dessert for breakfast, and this is it!!! Smore's Oatmeal! So creamy and chocolatey got me through a birthday party without eating cake. However make sure that you are in the mood for something super sweet, it is pretty rich. (I used Sweet and Sara mini mallows,best marshmallows I have ever had)

Banana Split Breakfast Bowl



I love this recipe! This will hit your sweet tooth for sure! This would be good for a breakfast or a dessert and it super filling. It's fruity and the mini chocolate chips make it just sweet enough to make you feel like you are having a treat.

Italian Lentil and Barley Soup


My husband read something about Lentils being super healthy and wanted to try them. So I went on the hunt for a new recipe to try and this is the first one we tried.

This soup is super yummy! It's really tasty, low cal, and really filling. I did tweak the recipe a little, I read the reviews and almost everyone said that unless you double the spices it is too bland. So I did about 1.5 cups of onion and 5 cloves of garlic. With those additions made it taste wonderful! This will be a perfect soup to make during fall and winter it will warm you up :)

Skinny French Toast

I made this for breakfast this morning, and it was super yummy! This is another recipe that I just kinda threw together so I will post what I did, but feel free to tweak it to make it the way you like it. This is a good way to have a good breakfast and feel like you aren't dieting at all.

Recipe:
Sara Lee 45 calorie wheat bread x2
Egg (I used a jumbo egg, and that's what the calories are based on too)
Splash if skim milk (1.5 tablespoons'ish)
Stevia in the Raw (or any other non calorie sweetener you like)
Splash of Vanilla extract (about 1 tsp)
Cinnamon

Then make french toast like you normally would. Then you can top with whatever you like here are some ideas:
Sugar free maple syrup
Light butter and powered sugar
Light whipped cream cheese and strawberries
Light peanut butter (be careful with peanut butter the calories add up fast)

Calories: 179  Carbs: 15g  Fat: 7g  Protein: 11g  Sugar: 4g  Fiber: 4g

Fruit and yogurt pizza

This is an awesome and quick snack! I don't have a recipe link to this one because I just randomly made it, but I'm sure you could search and find all kinds of recipes like it.

What I used:
Tortilla (I used low fat, high fiber, low carb blah blah, but you can use whatever you want)
Chobani: Strawberry greek yogurt
Fresh Raspberries
Small can mandarin oranges

This recipe would be awesome for kids too! Maybe get some smaller tortillas and have a bunch of fruit and do it up like a fruit pizza bar :)

Strawberry Swirl Cheesecake

I loved this recipe because just love cheesecake! I actually brought this to a 4th of July party and know one knew that it was a faux cheesecake recipe. It was a huge hit! The filling tastes like a new your style cheesecake, but it has way less calories. Plus the fruit made it light a summery. Now there are a lot of people that see that there is tofu in the recipe and freak out, but don't because when you eat it you would never know it!

Strawberry Short Stack



I love strawberries and I love pancakes so this recipe was a god send :) The pancakes are light and fluffy and the whip cream and strawberries make it feel like such a treat! Plus there is 14 grams of protein! Not many pancake recipes have protein, so they keep you fuller longer. I would totally recommend this recipe to anyone! Yum!
